Recipe: Ratatouille

Discover the mouthwatering dish that flung Oscar winning film ‘Ratatouille’ to fame. Easy to prepare, this is a healthy vegetarian snack.

Ingredients :

Oil - 2 Tbsp.
Small onion –1(minced)
Garlic clove – 1 (minced)
Eggplant small –1 (diced)
Zucchini – 1 (peeled & diced)
Tomatoes large & firm – 2 (skinned & diced)
Green bell peppers –1 (diced)
Salt - to taste
Cumin powder -1 tsp.
Coriander powder -1 tsp.
Chilli powder -1 tsp.
Sugar (optional) -1/2 tsp.
Cilantro - as garnish.


Method :

Peel the tomatoes by dipping in hot water then cooling in cold water.
Remove the skin, & dice.
Sprinkle salt over eggplant, Zucchini & let stand for 30 minutes.
Drain & pat dry on paper towels.
Heat Oil in a pan, add onions, fry till translucent, add garlic & stir.
Mix in the eggplant, Zucchini & cook.
Add pepper, tomatoes, salt & cover.
After few minutes, open the lid & add spice powders
Add water if the vegetables stick to the pan or the consistency is too thick.
Adjust the seasoning & garnish with cilantro.
Serve as side dish for rice & enjoy.
